Anyone VERY knowledgeable about Sanibel Island?

This is a XP from the DW board.
Cliff notes: We were going to take DS and his best friend to Orlando next month during the school's conference week. They would only miss 3 days of school, I had a TON of military discounts coming my way, WAS going to be a cheap trip.
Now, the school changed their calendar and the week we were going to go is no longer conference week, and we won't take the boys out of school for 6 days. They are HS freshman.
Sooo - we have spent a boatload of $$ to change the trip to Christmas break. The price has more than doubled.
We will go to the Sanibel Island area for the 23-26th. The resorts are crazy expensive but everyone is over the holidays.
Anyone know the area really well and can offer some ideas of where to stay? We are willing to look up to an hour away from the island if we have to. I also have to be able to come up with some kind of Christmas dinner for us - and we are very outside the box kind of people. We just wanted to go shelling for a couple of days.

Sanibel is more of the "upscale" beaches around here, so its always expensive. the toll alone across the bridge is $6. Although, it is beautiful and fun. I love and grew up on Little Hickory Island, its on Bonita Beach. That area is much less and you could rent your own home directly on the beach, or even across the street on the bay or canal. Tons of things to do down there on Ft myers beach and bonita beach. Coconut Pointe isnt to far away, 15mins. Good to shop, eat out, movies, etc. Boat rentals, canoe rentals, jetskii rentals, parasail everything right there on the beach. A great site is www.vrbo.com to find a house. There is also some condominums that rent out, or villas. I would highly recommend Ft Myers Beach, Bonita Beach, Barefoot Beach. All of those beaches arent to far from Naples and Ft Myers either. About 25-30 mins from Sanibel.
